Rice Pudding (Riisipuuro)

Ingredients

  • 1.5 cups white cooked rice
  • 1.5 cups milk
  • 1/3 cup sugar
  • pinch salt
  • 1/2 cup milk
  • 1 beaten egg
  • 1/2 cup raisins
  • 1 tbsp butter
  • 1/2 tsp vanilla

Instructions

  1. Combine rice, 1.5 cups milk, sugar, and salt and cook on medium heat for 25+ minutes, stirring often, more towards the end so it doesn’t burn, until thick and creamy. You want it close to be the final texture.
  2. Add 1/2 cup milk, egg, and raisins. Cook 2 more minutes.
  3. Remove from heat. Add butter and vanilla.
  4. Serve warm with cinnamon/ fruit sauce.
