Ingredients
- 6 pieces of bacon, chopped
- 3 tbsp butter
- 1 onion, chopped
- 1 red pepper, chopped
- 1 jalapeno, chopped
- 3 cloves garlic, minced
- 1/4 cup flour
- S&P
- 1 tsp paprika
- 1/2 tsp ground mustard
- 4 cups broth
- 1 cup milk
- 1/2 cup heavy cream
- 1 lb potatoes (1 large, 2 medium, or 3 small)
- 2-3 chicken breasts
- 2.5 cups corn
Instructions
- Cook bacon, set bacon aside. Keep 1-2 tbsp of bacon grease.
- Add butter.
- Add chopped onion, pepper, and jalapeno. Cook 5 minutes until soft.
- Add garlic. Cook 1 minute.
- Add flour. Cook 1 minute.
- Add spices.
- Slowly add/whisk in broth.
- Add milk, cream, potatoes, raw or cooked chicken breast. Boil and cook until potatoes and chicken are cooked.
- Remove chicken and shred/dice. Immersion blend half of the soup before re-adding the chicken and bacon.
- Slurp!
