Chicken Corn Chowder

Ingredients

  • 6 pieces of bacon, chopped
  • 3 tbsp butter
  • 1 onion, chopped
  • 1 red pepper, chopped
  • 1 jalapeno, chopped
  • 3 cloves garlic, minced
  • 1/4 cup flour
  • S&P
  • 1 tsp paprika
  • 1/2 tsp ground mustard
  • 4 cups broth
  • 1 cup milk
  • 1/2 cup heavy cream
  • 1 lb potatoes (1 large, 2 medium, or 3 small)
  • 2-3 chicken breasts
  • 2.5 cups corn

Instructions

  1. Cook bacon, set bacon aside. Keep 1-2 tbsp of bacon grease.
  2. Add butter.
  3. Add chopped onion, pepper, and jalapeno. Cook 5 minutes until soft.
  4. Add garlic. Cook 1 minute.
  5. Add flour. Cook 1 minute.
  6. Add spices.
  7. Slowly add/whisk in broth.
  8. Add milk, cream, potatoes, raw or cooked chicken breast. Boil and cook until potatoes and chicken are cooked.
  9. Remove chicken and shred/dice. Immersion blend half of the soup before re-adding the chicken and bacon.
  10. Slurp!
