One Pan Chicken with Bacon and Acorn Squash

Ingredients

  • 5 slices maple bacon
  • 4 servings of chicken (4 chicken breasts, 8 chicken thighs)
  • 1 acorn squash
  • 2 tsp butter
  • 1 tbsp brown sugar
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1/2 tsp cinnamon
  • 1 tsp sage + 1 tsp sage
  • S&P

Instructions

  1. Preheat oven to 375°F.
  2. Cook bacon in pan until almost cooked, it will get crispy when cooked with everything. Chop bacon into chunky pieces. Reserve 1 tbsp bacon grease.
  3. Brown butter on medium-high in pan, swirling the pan while it browns. This takes only a couple of minutes. Let sit 1 minute to cool.
  4. Mix spices with butter in large bowl. Toss chicken in the mixture. Put chicken on a large baking pan.
  5. Cut acorn squash into half moons. Add squash to same bowl used for chicken, adding bacon grease, more sage, and S&P. Toss. Add to baking pan.
  6. Add bacon to baking pan.
  7. Bake until chicken is cooked, 30-35 minutes. Stir/mix halfway through.
  8. Enjoy!
