Chicken Corn Chowder

Ingredients

  • 5 strips bacon
  • 1 diced onion
  • 3 tbsp butter
  • 1 diced bell pepper
  • 3 cloves garlic
  • 3 tbsp flour
  • 2 cups milk/ cream
  • 4 cups broth
  • 1 tsp hot sauce
  • 1 tsp Worcestershire sauce
  • 1 bay leaf
  • 1 tsp paprika
  • 2 chicken breasts
  • S&P
  • 4 large potatoes, diced
  • 2 cups corn

Toppings

  • Shredded cheddar cheese
  • Green onions
  • Extra bacon

Instructions

  1. Cook bacon. Chop into pieces.
  2. Cook onions in butter until soft.
  3. Add bell peppers and garlic. Cook 3 minutes until soft.
  4. Add flour, cook for 2 minutes.
  5. Mix broth, hot sauce, and Worcestershire.
  6. Add broth mixture to flour/vegetable mixture in small increments, stirring constantly. Add milk in small increments, stirring constantly.
  7. Bring to boil.
  8. Season raw chicken breasts with S&P and cut lengthwise in 2.
  9. Add bay leaf and chicken to boiling pot. Simmer for 15-20 minutes until chicken is cooked. Remove chicken and dice.
  10. Add diced potatoes to pot and simmer 20-25 minutes until cooked.
  11. Add diced chicken, corn, chopped bacon, S&P, and paprika to pot. Cook a few minutes.
  12. Top with cheese, green onion, and bacon.
  13. Slurp!
