Red Onion Soup

Ingredients

  • 1 tbsp olive oil
  • 1 tbsp butter
  • 6 red onions, thinly sliced
  • 2 tsp salt
  • 1/4 cup red wine (or balsamic vinegar)
  • 2 tbsp soy sauce
  • 2 tbsp mustard
  • 6 cups broth
  • S&P

Toppings

  • French bread
  • Cheese – Swiss, provolone

Instructions

  1. Heat oil in large pot. Add butter. Once melted, add thinly sliced onions and salt. Cook, stirring occasionally, on medium-low, until caramelized, about 30 minutes.
  2. Add red wine, soy sauce, and mustard. Cook 5 minutes.
  3. Add broth, bring to a boil. Simmer 15 minutes.
  4. Toast French bread in oven.
  5. Put soup in oven safe bowls. Top with bread and cheese. Broil in oven until cheese is melted.
  6. Slurp!
