Ingredients
- 1 tbsp olive oil
- 1 tbsp butter
- 6 red onions, thinly sliced
- 2 tsp salt
- 1/4 cup red wine (or balsamic vinegar)
- 2 tbsp soy sauce
- 2 tbsp mustard
- 6 cups broth
- S&P
Toppings
- French bread
- Cheese – Swiss, provolone
Instructions
- Heat oil in large pot. Add butter. Once melted, add thinly sliced onions and salt. Cook, stirring occasionally, on medium-low, until caramelized, about 30 minutes.
- Add red wine, soy sauce, and mustard. Cook 5 minutes.
- Add broth, bring to a boil. Simmer 15 minutes.
- Toast French bread in oven.
- Put soup in oven safe bowls. Top with bread and cheese. Broil in oven until cheese is melted.
- Slurp!
