Tomato Meatball Soup

Ingredients

  • 450g ground beef
  • 1 egg
  • 2 cloves garlic
  • 1/2 cup bread crumbs
  • 1/4 cup chopped, fresh parsley
  • S&P
  • 1/2 cup parmesan cheese
  • olive oil
  • 1/2 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic
  • 1 tbsp tomato paste
  • 1 can diced tomatoes
  • 4 cups broth
  • 2 bay leaves

Instructions

  1. Preheat oven to 450°. Make meatballs. Combine ingredients and form into balls. Bake 20 minutes until cooked.
  2. Cook onion, bell pepper, garlic, and S&P in olive oil until well cooked.
  3. Add tomato paste and cook 1 minute.
  4. Add diced tomatoes, broth, bay leaves, S&P, and meatballs.
  5. Simmer 1 hour.
  6. Add noodles, cook until soft.
  7. Slurp!
