Gnocchi

Ingredients

  • 3 medium russet potatoes
  • 1 1/2 cups flour
  • 1 egg
  • 1 tsp salt

Instructions

  1. Boil potatoes for 25-30 minutes until tender but still firm. Cut into halves if larger potatoes.
  2. Drain potatoes and let sit in empty pot to cool slightly, 10 minutes.
  3. Peel potatoes by rubbing skin off/ peeling skin off with your hands.
  4. Pass potatoes through potato ricer or mash until very smooth.
  5. Let cool 10 minutes.
  6. Fold in flour, egg, and salt until incorporated.
  7. Gently knead on floured surface a couple of times. Add more flour if sticky. Do not overwork.
  8. Divide dough into 4 portions. Roll each into long snakes on floured surface.
  9. Cut into pieces. Roll on gnocchi board (optional). Dust with flour.
  10. Add pieces to boiling water, cook 3-4 minutes until floating.
  11. Makes 1kg/2lbs of gnocchi.
