Ingredients
- 3 medium russet potatoes
- 1 1/2 cups flour
- 1 egg
- 1 tsp salt
Instructions
- Boil potatoes for 25-30 minutes until tender but still firm. Cut into halves if larger potatoes.
- Drain potatoes and let sit in empty pot to cool slightly, 10 minutes.
- Peel potatoes by rubbing skin off/ peeling skin off with your hands.
- Pass potatoes through potato ricer or mash until very smooth.
- Let cool 10 minutes.
- Fold in flour, egg, and salt until incorporated.
- Gently knead on floured surface a couple of times. Add more flour if sticky. Do not overwork.
- Divide dough into 4 portions. Roll each into long snakes on floured surface.
- Cut into pieces. Roll on gnocchi board (optional). Dust with flour.
- Add pieces to boiling water, cook 3-4 minutes until floating.
- Makes 1kg/2lbs of gnocchi.
