Ingredients
- 1 tbsp oil
- 1 onion
- 2 ribs of celery
- 2 carrots
- 4 cloves
- 1/4 cup flour
- 6 cups broth
- 6 boneless, skinless chicken thighs, cubed
- 1 tsp thyme
- S&P
- 500g gnocchi (fresh/frozen/dried)
- 4 cups spinach, chopped
- 1 cup half & half cream
Instructions
- Heat oil. Add chopped onion, chopped carrot, chopped celery. Cook until soft.
- Add garlic. Cook 1 minute.
- Add flour, cook 1 minute while stirring.
- Add broth. Bring to simmer.
- Add chicken, thyme, S&P. Simmer on medium-low until chicken is cooked, about 5 minutes.
- Add gnocchi, cook 5 minutes.
- Add spinach and cream, cook 2 minutes.
- Slurp!
