Chicken Gnocchi Soup

Ingredients

  • 1 tbsp oil
  • 1 onion
  • 2 ribs of celery
  • 2 carrots
  • 4 cloves
  • 1/4 cup flour
  • 6 cups broth
  • 6 boneless, skinless chicken thighs, cubed
  • 1 tsp thyme
  • S&P
  • 500g gnocchi (fresh/frozen/dried)
  • 4 cups spinach, chopped
  • 1 cup half & half cream

Instructions

  1. Heat oil. Add chopped onion, chopped carrot, chopped celery. Cook until soft.
  2. Add garlic. Cook 1 minute.
  3. Add flour, cook 1 minute while stirring.
  4. Add broth. Bring to simmer.
  5. Add chicken, thyme, S&P. Simmer on medium-low until chicken is cooked, about 5 minutes.
  6. Add gnocchi, cook 5 minutes.
  7. Add spinach and cream, cook 2 minutes.
  8. Slurp!
