French Onion Soup

Ingredients

  • 4 tbsp butter (unsalted is preferred)
  • 4 large yellow onions (or Spanish/sweet, but will take slightly longer to cook), thinly sliced into half-moons
  • 2 tbsp flour
  • 1/2 cup dry white wine (or red, white is preferred)
  • 4 cups beef broth
  • 2 cups chicken/vegetable broth
  • 1 tsp thyme (or 8 fresh thyme sprigs)
  • S&P
  • Baguette/bread
  • 1 cup shredded white cheese (Gruyère, Swiss, provolone, mozzarella, gouda)

Instructions

  1. Melt butter over medium heat. Add onions and cook 45-60 minutes until dark golden brown.
  2. Add flour and cook 1-2 minutes. Salt if used unsalted butter.
  3. Add wine, bring to simmer. Cook 1-2 minutes.
  4. Add broth and thyme, bring to boil. Simmer 15 minutes.
  5. Remove thyme if added sprigs. Add S&P.
  6. Turn oven broiler to high.
  7. Add soup to ramekins, top with bread and cheese.
  8. Broil until golden, 1-2 minutes.
  9. Slurp!
