Ingredients
- 4 tbsp butter (unsalted is preferred)
- 4 large yellow onions (or Spanish/sweet, but will take slightly longer to cook), thinly sliced into half-moons
- 2 tbsp flour
- 1/2 cup dry white wine (or red, white is preferred)
- 4 cups beef broth
- 2 cups chicken/vegetable broth
- 1 tsp thyme (or 8 fresh thyme sprigs)
- S&P
- Baguette/bread
- 1 cup shredded white cheese (Gruyère, Swiss, provolone, mozzarella, gouda)
Instructions
- Melt butter over medium heat. Add onions and cook 45-60 minutes until dark golden brown.
- Add flour and cook 1-2 minutes. Salt if used unsalted butter.
- Add wine, bring to simmer. Cook 1-2 minutes.
- Add broth and thyme, bring to boil. Simmer 15 minutes.
- Remove thyme if added sprigs. Add S&P.
- Turn oven broiler to high.
- Add soup to ramekins, top with bread and cheese.
- Broil until golden, 1-2 minutes.
- Slurp!
