Ingredients
- olive oil
- 450g ground beef
- 1 large onion
- 5 garlic cloves
- 4.5 cups broth
- 1 can diced tomatoes
- 1 can crushed tomatoes
- 3 tbsp tomato paste
- 2 tsp dried basil
- 1 tsp oregano
- 1/2 tsp dried rosemary, crushed
- 1/2 tsp dried thyme
- S&P
- 8 lasagna noodles
- 1 cup shredded mozzarella cheese
- 1/2 cup parmesean cheese
- 1 cup ricotta cheese
- fresh parsley
Instructions
- Cook ground beef in olive oil. Season with S&P. Remove meat from pan. Leave some oil in pan.
- Cook chopped onion in oil until soft. Add garlic and cook until fragrant.
- Re-add beef. Add broth, tomatoes, and spices.
- Bring to a boil, then simmer 20 minutes.
- Break noodles into bite sized pieces (smaller than you’d think, they’ll grow) and cook as per package.
- Add noodles to soup or add noodles to individual bowls. Add parsley to soup.
- Mix cheeses together. Top bowl of soup with cheese mixture.
- Slurp!
