Lasagna Soup

Ingredients

  • olive oil
  • 450g ground beef
  • 1 large onion
  • 5 garlic cloves
  • 4.5 cups broth
  • 1 can diced tomatoes
  • 1 can crushed tomatoes
  • 3 tbsp tomato paste
  • 2 tsp dried basil
  • 1 tsp oregano
  • 1/2 tsp dried rosemary, crushed
  • 1/2 tsp dried thyme
  • S&P
  • 8 lasagna noodles
  • 1 cup shredded mozzarella cheese
  • 1/2 cup parmesean cheese
  • 1 cup ricotta cheese
  • fresh parsley

Instructions

  1. Cook ground beef in olive oil. Season with S&P. Remove meat from pan. Leave some oil in pan.
  2. Cook chopped onion in oil until soft. Add garlic and cook until fragrant.
  3. Re-add beef. Add broth, tomatoes, and spices.
  4. Bring to a boil, then simmer 20 minutes.
  5. Break noodles into bite sized pieces (smaller than you’d think, they’ll grow) and cook as per package.
  6. Add noodles to soup or add noodles to individual bowls. Add parsley to soup.
  7. Mix cheeses together. Top bowl of soup with cheese mixture.
  8. Slurp!
