Beef Barley Soup

Ingredients

  • 450g stewing beef
  • oil
  • 1 tbsp butter (or oil)
  • 1 yellow onion
  • 2 ribs celery
  • 4 cloves garlic
  • 2 carrots
  • 2 tbsp tomato paste
  • 2 bouillon cubes/packages
  • 2 tsp Worcestershire
  • 6 cups broth
  • 2/3 cup pearl barley
  • S&P
  • 2 bay leaves

Instructions

  1. Cook cubed beef in oil with S&P until browned.
  2. Remove beef.
  3. Cook chopped onions and celery in 1 tbsp butter/oil until soft.
  4. Add garlic and cook until fragrant.
  5. Add all ingredients and beef to the pot. Bring to boil.
  6. Simmer 60-90 minutes until beef is tender. (Add barley later if planning to simmer longer or use crock pot).
  7. Slurp!
