Ingredients
- oil
- 2 ribs celery, chopped
- 3 carrots, chopped
- 1 onion, chopped
- 4 cloves garlic, chopped
- 3 bay leaves
- 8 cups broth
- 1 can lentils
- 2 potatoes, chopped
- 1 cup spinach
- S&P
- 3 tbsp red wine vinegar
Instructions
- Cook celery, carrots, onion, and garlic in oil until soft, for 10 minutes.
- Add broth, bay leaves, and lentils. Simmer for 30 minutes.
- Add potatoes and cook for 10 minutes.
- Add spinach until wilted.
- Add red wine vinegar.
- Remove bay leaves.
- Slurp!
