Lentil Vegetable Soup

Ingredients

  • oil
  • 2 ribs celery, chopped
  • 3 carrots, chopped
  • 1 onion, chopped
  • 4 cloves garlic, chopped
  • 3 bay leaves
  • 8 cups broth
  • 1 can lentils
  • 2 potatoes, chopped
  • 1 cup spinach
  • S&P
  • 3 tbsp red wine vinegar

Instructions

  1. Cook celery, carrots, onion, and garlic in oil until soft, for 10 minutes.
  2. Add broth, bay leaves, and lentils. Simmer for 30 minutes.
  3. Add potatoes and cook for 10 minutes.
  4. Add spinach until wilted.
  5. Add red wine vinegar.
  6. Remove bay leaves.
  7. Slurp!
