Slow Cooker Beef Stew

Ingredients

  • 2 tbsp olive oil
  • 2 lbs stew meat, cubed
  • S&P
  • 1 pound potatoes, large cubes
  • 4 carrots, sliced lengthwise into chunks
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 3 cups beef broth
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1/4 cup red wine/ red wine vinegar
  • 1 tsp thyme
  • 1 tsp rosemary
  • 1 tsp paprika
  • 2 bay leaves
  • 1/4 cup flour

Instructions

  1. Brown meat in pan in olive oil and S&P.
  2. Add all ingredients (besides flour) to crockpot. Add S&P.
  3. Cook on low 7-8 hours or on high for 3-4 hours.
  4. Whisk flour with some stew broth in a small bowl. Add to stew.
  5. Cook 30 more minutes to thicken.
  6. Slurp!
