Instructions
- olive oil
- 1/2 onion
- 3 carrots
- 2 stalks celery
- 4 garlic cloves
- 4 cups broth
- 1 can chickpeas
- 1 1/4 cup quinoa
- 1 can diced tomatoes
- 1 can tomato sauce
- 1 tbsp Italian seasoning
- pinch red pepper flakes
- 2 cups fresh spinach, chopped
- 1 1/2 cups half and half
- S&P
- Parmesan cheese (topping)
Instructions
- Saute onion, carrots, celery, and garlic in olive oil with S&P until soft.
- Add broth, chickpeas, quinoa, tomatoes, and seasoning.
- Simmer for 20-25 minutes, partially covered.
- Stir in spinach and cream.
- Top with Parmesan.
- Slurp!
