Creamy Italian Quinoa Soup

Instructions

  • olive oil
  • 1/2 onion
  • 3 carrots
  • 2 stalks celery
  • 4 garlic cloves
  • 4 cups broth
  • 1 can chickpeas
  • 1 1/4 cup quinoa
  • 1 can diced tomatoes
  • 1 can tomato sauce
  • 1 tbsp Italian seasoning
  • pinch red pepper flakes
  • 2 cups fresh spinach, chopped
  • 1 1/2 cups half and half
  • S&P
  • Parmesan cheese (topping)

Instructions

  1. Saute onion, carrots, celery, and garlic in olive oil with S&P until soft.
  2. Add broth, chickpeas, quinoa, tomatoes, and seasoning.
  3. Simmer for 20-25 minutes, partially covered.
  4. Stir in spinach and cream.
  5. Top with Parmesan.
  6. Slurp!
