Ingredients
- 4 cups broth
- 1 can coconut milk
- 1/4 cup soy sauce
- 2 tbsp honey
- 1/3 cup peanut butter
- 4 regular chicken breasts
- 1 cup sliced cremini mushrooms
- 1 red bell pepper
- 1 inch fresh ginger, grated
- 3 cloves garlic
- 1/4 cup Thai red curry paste (or crushed red pepper flakes and curry spices)
- 3 squares ramen noodles
- lime juice
- 3 cups spinach
- 1/3 cup cilantro
- chopped peanuts (topping)
- toasted sesame oil (topping)
Instructions
- Add main ingredients to pot.
- Simmer 15 minutes, until chicken is cooked.
- Shred chicken.
- Bring to boil. Add noodles, lime juice, spinach, and cilantro.
- Let sit 5 minutes until noodles are cooked.
- Top in bowl with peanuts and sesame oil.
- Slurp!
