Thai Peanut Chicken Ramen

Ingredients

  • 4 cups broth
  • 1 can coconut milk
  • 1/4 cup soy sauce
  • 2 tbsp honey
  • 1/3 cup peanut butter
  • 4 regular chicken breasts
  • 1 cup sliced cremini mushrooms
  • 1 red bell pepper
  • 1 inch fresh ginger, grated
  • 3 cloves garlic
  • 1/4 cup Thai red curry paste (or crushed red pepper flakes and curry spices)
  • 3 squares ramen noodles
  • lime juice
  • 3 cups spinach
  • 1/3 cup cilantro
  • chopped peanuts (topping)
  • toasted sesame oil (topping)

Instructions

  1. Add main ingredients to pot.
  2. Simmer 15 minutes, until chicken is cooked.
  3. Shred chicken.
  4. Bring to boil. Add noodles, lime juice, spinach, and cilantro.
  5. Let sit 5 minutes until noodles are cooked.
  6. Top in bowl with peanuts and sesame oil.
  7. Slurp!
