Ingredients
- 8 slices bacon, diced
- 2 tbsp butter
- 1 onion
- 1/4 cup flour
- 2 cloves garlic
- 5 cups broth
- 4 cups corn (frozen, canned, fresh)
- 1/4 tsp thyme
- 1/4 smoked paprika
- S&P
- 1 cup cream
- chives
Instructions
- Cook bacon, remove from pot.
- Keep 1 tbsp grease, add butter.
- Dice onion, add to pot, cook.
- Add garlic and flour. Cook for 1 minute.
- Whisk in broth.
- Add corn, potatoes, and spices. Stir and bring to boil.
- Simmer until potatoes are soft, 15-20 minutes.
- Blend half of the soup until smooth.
- Add cream and bacon. Top with chives.
- Slurp!
