Corn Chowder

Ingredients

  • 8 slices bacon, diced
  • 2 tbsp butter
  • 1 onion
  • 1/4 cup flour
  • 2 cloves garlic
  • 5 cups broth
  • 4 cups corn (frozen, canned, fresh)
  • 1/4 tsp thyme
  • 1/4 smoked paprika
  • S&P
  • 1 cup cream
  • chives

Instructions

  1. Cook bacon, remove from pot.
  2. Keep 1 tbsp grease, add butter.
  3. Dice onion, add to pot, cook.
  4. Add garlic and flour. Cook for 1 minute.
  5. Whisk in broth.
  6. Add corn, potatoes, and spices. Stir and bring to boil.
  7. Simmer until potatoes are soft, 15-20 minutes.
  8. Blend half of the soup until smooth.
  9. Add cream and bacon. Top with chives.
  10. Slurp!
