Ingredients
- 3 pounds tomatoes
- 8 cloves garlic
- 3 tbsp olive oil
- 1/2 tbsp olive oil
- 2 yellow onions
- 1/2 cup basil leaves
- 1/2 tsp oregano
- 2 cups broth
- S&P
- 1 cup cream
Instructions
- Preheat oven 400 degrees F.
- Halve tomatoes, peel garlic. Place on parchment covered baking sheet. Drizzle with olive oil, season with S&P.
- Roast 45 mins.
- Slice onions. Cook in pot over medium heat with 1/2 tbsp olive oil.
- Cook around 20 minutes, stirring occasionally, until caramelized and golden.
- Allow tomatoes and garlic to cool for 10 minutes. Blend in blender or food processor until smooth.
- Add basil and onions, blend.
- Transfer all to pot. Add oregano, broth, S&P, and cream. Simmer 10 minutes.
- Slurp!
