Roasted Tomato and Basil

Ingredients

  • 3 pounds tomatoes
  • 8 cloves garlic
  • 3 tbsp olive oil
  • 1/2 tbsp olive oil
  • 2 yellow onions
  • 1/2 cup basil leaves
  • 1/2 tsp oregano
  • 2 cups broth
  • S&P
  • 1 cup cream

Instructions

  1. Preheat oven 400 degrees F.
  2. Halve tomatoes, peel garlic. Place on parchment covered baking sheet. Drizzle with olive oil, season with S&P.
  3. Roast 45 mins.
  4. Slice onions. Cook in pot over medium heat with 1/2 tbsp olive oil.
  5. Cook around 20 minutes, stirring occasionally, until caramelized and golden.
  6. Allow tomatoes and garlic to cool for 10 minutes. Blend in blender or food processor until smooth.
  7. Add basil and onions, blend.
  8. Transfer all to pot. Add oregano, broth, S&P, and cream. Simmer 10 minutes.
  9. Slurp!
